This progressive Indian cuisine blend traditional with conventional cuisine in well-made dishes like ‘Stanley Ka Dabba’ (served in an interesting tiffin box) comprising Kerela fish curry, Kerela parantha, chicken palipalayam, and tomato Pappu served with appams. Amuse bouche of papdi chaat beautifully served over plumes of dry ice as a chilled sphere of yogurt (infused with flavors of tangy and sweet tamarind sauce). Lamb shank; Jalebi caviar, superb Ghevar Cheesecake. Others include ‘Dhokla Ya Pakoda’, Galouti, Kakori Kebabs, and Sarson Ka Saag. The freshly spun pan flavoured Candy floss served on a mini tree is a beautiful way to end the meal.
